Sheer khurma recipe/ Sheer khorma without sugar/ Vermicelli pudding

Sheer khurma is a traditional South Asian Muslim festive breakfast or Dessert. It is basically vermicelli pudding made with milk and dry fruits.

Sheer khorma literally means dates in milk. It is prepared by Muslims on the occasion of Eid-ul-Fitr and Eid-ul-Adha. Its place of origin can be rooted in Afghanistan and Hyderabad, India.

Very nutritious packed with calcium, carbohydrates and all the vitamins, minerals from the goodness of milk and dry fruits like almonds, cashews, pistachios and dates.

There are many versions of sheer korma based on region. Here is a simple Hyderabadi version of the recipe. Team it up as a dessert with Nizami chicken biryani or Nizami mutton biryani or Mutton pulao for a full course meal.

Sheer khurma recipe/ Sheer khorma without sugar/ Vermicelli pudding – – Sewiyan/ thin Vermicelli, Milk ((boiled, whole milk preferably)), Condensed milk ((half cup)), Raisins / kishmish, Almonds / badaam, Cashews / Kaju, Pistachios, Dates/ Khajoor ((Fresh, Raw)), Sugar ((optional)), Ghee / Clarified butter, Cardamom powder / Elaichi powder ((or 1 teaspoon rose water)), , Boil the dry fruits like almonds, pistachios and cashews for 8 minutes.; Peel the dry fruits and chop them into fine thin slices.; In a frying pan add 1 tablespoon ghee and stir fry the sliced dry fruits until light golden in colour. Keep this aside. ; Break the bundle of vermicelli into small pieces.; Heat 1.5 tablespoons of ghee in a saucepan and fry the vermicelli until it turns golden in colour.; Now add milk, cardamom powder and condensed milk and give this a boil on a medium flame for 2-3 minutes. Add sugar if requires as per taste.; Finally, add the fried dry fruits and switch off the flame.; Add sliced dates and raisins at the time of serving. That's it sheer khurma is ready.
