RASMALAI RECIPE / Homemade Rasmalai Recipe
Rasmalai is a popular Indian dessert made from soft, spongy paneer (cottage cheese) balls soaked in sweet, flavored milk. The milk is typically infused with cardamom and saffron, and garnished with chopped nuts, such as pistachios and almonds.

Ingredients
- 1.5 litre Toned Milk
- 1 tablespoon Vinegar or lime juice
- 2 teaspoon Corn Flour
- 4 tablespoon Sugar
- 1 fistful Mixed nuts thinly sliced (almonds,cashews, pistachios thinly sliced)
- 3-4 pods Cardamom / Elaichi
- 1 teaspoon Rose Petals (optional)
- 1 teaspoon Saffron Essence
- 1 pinch Turmeric powder/yellow orange food color (optional for yellow colour)

Instructions
Step 1: Making Cottage cheese balls
- Heat 1 litre of milk in a sauce pan until it starts to boil. Switch off the flame.
- Now add the vinegar, give it a stir and keep aside for 2 minutes. The curd starts forming lumps. Now separate the whey by straining it through a sieve. Wash the milk solids with clean water to remove any excess vinegar. Allow it to drain for about 10 minutes. Keep aside.
