First of all, boil the green peas untill tender.
Meanwhile dice all the vegetables as shown. Keep aside.
Now heat oil in a cooking pot . Add the onions and ginger garlic paste. Saute for few seconds, so that the raw smell of gingergarlic paste goes away. Add the tomatoes and saute for 2 minutes untill soft.
Now add turmeric powder, red chilli powder, pav bhaji masala and saute for about 1 minute.
Mix well. Add all the diced veggies and saute for a minute.
Drain the water from the peas and add them to the gravy. Add salt. Mix well.
Add a glass of water and form a gravy. Cover and cook for 5 minutes untill veggies get soft.
Remove the lid and mash the vegetables as shown, to form a coarse gravy.
Adjust the salt. At last add freshly chopped coriander and butter. allow to simmer for 2 miuntes. Your curry for Pav bhaji is ready.
For the Pav
Cut the Pav horizontally into halves as shown.
Heat a pan or tawa, Apply some butter on the pav and as well as on pan. Toast the pav upside and down as shown untill golden.
Put some butter on the curry while serving. Serve hot alongside a slice of lime, freshly chopped onion and hot toasted pav (dinner roll). That’s it!! Your yummy Pav bhaji is ready. Enjoy!!
Recipe Notes
Many variants of pavbhaji can be made, like Paneer pav bhaji by adding paneer or Beetroot pav bhaji by adding beetroot. It’s up to you what you would like to add to your gravy as per your taste and convenience.
If making in large quantities, it’s recommended to preboil the peas and potatoes. This saves loads of time.
Whole wheat pav or bread can also be used in place of white flour bread to make the recipe much healthier.
Use less oil and less butter. If you are looking for a low-calorie option of the recipe.
