Okra Curry / Mitthi Bhendi / Lady's Finger Curry
Instructions
Firstly wash and dice the okra into one-inch pieces and keep aside.
Heat oil in a cooking pot and when oil is hot add onions and saute until they turn pinkish in color then add curry leaves, ginger garlic paste and saute. To this add turmeric powder, red chilli powder, coriander powder, salt and diced lady's finger. Saute for about a minute.
To this add about 50 ml water and mix well. Close the lid and asimmer in for about 10 minutes then add green chillies, fresh coriander leaves and close the lid and simmer for about a minute. Switch off the flame and serve hot.
Recipe Notes
- Adding water is optional in this curry. If you want a bit gravy like consistency to the curry then add water to it.
- Adding tomato is also optional. If you wish to add toamto, then add it along with okra and then simmer it. Adding tomato gives a nice falvor
