Hyderabadi Kachche Gosht ke Shamiyan are melt-in-the-mouth kebabs made with raw minced meat (usually mutton), and a blend of aromatic spices. Unlike regular shami kebabs that use cooked meat, this traditional Hyderabadi version uses raw (kachcha) meat mixed with spices and gram flour. The mixture is then finely ground, shaped into patties, and shallow-fried to golden perfection. Rich, flavorful, and delicately spiced, these kebabs are a royal treat, often served with mint chutney and onions at festive gatherings or special meals.
These shami kebabs share a brotherhood with sheekh kebabs but are milder compared to them and can be made on tawa.
Serve them with Hyderabadi khatti dal, rice and paratha alongside onion salad with squeezed lemon for a full course meal.

Instructions
Wash and drain the mutton thoroughly. Keep aside.
In a mixer grinder add roughly chopped onions, fresh coriander, fresh mint leaves, green chillies, besan, red chilli powder, turmeric, lemon juice, ghee and all dry spices. Make fine paste. Add this paste to the washed mutton.
Grind this marinated mutton into a smooth textured mixture for making shami kebabs.
Make oval shaped shami kebab of 4-5 inches. Shallow fry on medium flame for 4-5 minutes untill well cooked on both sides. That's it. Delicious Hyderabadi shami kebab are ready to be served. Serve hot.
Recipe Notes
- The same recipe can be made with beef or chicken.
- You can also cover and cook for 2-3 minutes, to ensure shami is not raw from inside.
