Mashed Potato curry for dosa / Aaloo ka salan

Mashed potato curry is very simple dish which is served as a side dish with masala dosa. This curry can also be used as a stuffing for samosa, bread pakoda, or bharwa mirch pakode.

Team it up with dosa and tangy groundnut chutney to make a full course meal.

  1. Heat oil in a wok or cooking pot on medium flame. Add mustard seeds, curry leaves. To this add sliced onion, green chillies and saute for 1 minute.

  2. Add ginger-garlic paste and turmeric powder and saute for 1 minute.
  3. Add the diced potatoes, salt and mix well. Stir fry the potatoes for 1 minute.

  4. Then add water and close the lid. Cook on high flame for 1 minute and then lower the flame to sim mode and cook covered for 15 minutes. This softens the potatoes.

  5. Now with a spatula mash the potatoes roughly. Finally, add coriander leaves. That's it mashed potato curry is ready. Serve hot.

Recipe Notes
  1. Do not mash the potatoes completely, mash them roughly leaving some pieces.
  2. You can use already boiled potatoes instead of using raw diced potatoes. Add only half of the water if using boiled potatoes. The rest procedure is the same.
