  1. Peel, wash, cut length wise, then deseed the bottle gourd. Now cut it into 1 inch pieces and keep aside.
  2. Heat oil in a cooking pot, add the onions and saute for 2 until translucent.
  3. Now add the curry leaves, ginger-garlic paste, turmeric powder, red chilli powder and salt. Saute for 1 minute.
  4. Add the bottle gourd pieces, mix and saute for 2 minutes on medium flame.
  5. Now close the lid ,cover and cook for 5 minutes on low flame.
  6. After 5 minutes, remove the lid and add water.
  7. Cook on high for 2 minutes, so that the curry starts boiling.Again cover and cook for 10 minutes on low flame or until bottle gourd becomes soft and well cooked.
  8. Garnish with coriander and serve hot.
Recipe Notes

1. Do not add excess water in the curry as it will increase the cooking time taken for bottlegourd to become soft.
2. This curry tastes best with less gravy, so make sure to add limited number of onions.
3. This tastes best when combined with chapati, roti, rice and shaami kebab.
