  1. Heat 1 tablespoon ghee on medium heat in a pan and fry all the sliced almonds. cashews, pistachios, and raisins for 2 minutes until light golden in color.
  2. Wash and grate the carrots.
  3. Heat 2.5 tablespoons of ghee in a pan. Saute the grated carrots for 3 minutes on medium flame.
  4. Add the sugar and cook for 1 minute or until sugar liquifies.
  5. Mix khoya and milk in a bowl. Keep aside.
  6. Now add cardamom powder, milk-khoya mixture to carrot mixture.
  7. Cook on high flame until the mixture thickens.
  8. Remove it in a serving dish and garnish it with dry fruits. Gajar ka halwa is ready to be served.
Recipe Notes
  1. I have used normal carrots which are always available, you can use special reddish sweet carrots which are available in the winter season.
  2. Sweetened condensed milk can be used in place of khoya.
