Bagaara khana
Instructions
Heat oil+ghee in a cooking pot, then add onions to it and saute until the onions turn golden brown in color, then add ginger garlic paste and saute until it turns golden in color.
To this add black cumin seeeds, cardamom, cinnamom, clove, bay leaf and saute for few seconds. Then add green chillies, curry leaves, mint leaves, coriander and saute for about 15 seconds. Add water to this and close the lid and bring the water to rolling boil.
Then add salt and washed rice to it and cook on high flame until only 1/4 of the water is left over. Then close the lid and simmer it for about 10-12 minutes. That's it bagaara khana is ready, Serve hot with any gravy type curries like Chicken khorma, Dalcha, Dum ka murgh, soybean-mutton curry, dal fry etc.
Recipe Notes
- Adding ghee is optional in this, if you wish to skip adding ghee then add 4 tablespoons of oil instead of 3 tablespoons.
- Always remember to add water and rice in 2:1 ratio. For example, if you take 1 cup of rice then add 2 cups of water to it.
